Food handler indicated that she had emptied the sanitizer bucket to refill it but had not done so before customers started lining up. Ensure the sanitizer solution is available to allow for cleaning and sanitizing between customers.

      • Drywall above the three-compartment sink is cracked and flaking. Damaged drywall must be repaired.

      • Concentration of the quats sanitizer in the 3rd sink was too low. Ensure the concentration of quats sanitizer is 200 ppm.

      • Sanitizer concentration was not being regularly checked and the concentration recorded. Ensure quats sanitizer concentration is checked and adjusted to 200 ppm. This should be recorded.
