      • Observed 3 packages of frozen cooked chicken left in a stainless steel insert on a prep table in back kitchen. Potentially left to thaw out at room temperature.

      • No sanitizer detected for the container storing the used knives. Corrected onsite.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Staff member was observed entering the kitchen and washing her hands by turning on the faucet for a couple seconds, using paper towel to dry hands, and then putting on gloves. Ensure staff are washing their hands for at least 15 seconds with warm water and soap.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Improper manual dishwashing in place. Facility is doing wash, sanitize, rinse and water was cold in the compartments. Please ensure you are washing, rinsing and then sanitizing dishes. Do not rinse dishes after the sanitizing step. Ensure warm/hot water (45C) is used.
