- 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
- In accordance with Section 4.2.1(b) of the NS Food Retail and Food Services Code, you must identify all cleaning and sanitizing agents used in the Food Establishment and their concentrations.

- 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
- Do not use tin foil and cardboard as liners in food preparation areas.
- 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
- In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must ensure: all shelving and food is maintained a minimum of 15 cm (6 inches) off the floor; storage areas are located in a dry, pest-free location.
- 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:
(b) adequately designed and appropriately located hand-washing facilities;
- Ensure hand wash stations have adequate supplies available in dedicated dispensers.

(a) the food establishment and equipment are maintained, cleaned and sanitized;
- Clean and sanitize the ice machine.

(a) transferred to clean, suitably covered containers or be sealed and securely closed; and
- Food from open cans must be transferred to food grade containers if they are to be stored for later use.

- 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
- A hand-made stand for dish-soap dispenser using foam and tape was observed next to the three-compartment sink at the time of inspection. This is not an easily cleanable option and should not be used in a food establishment
- 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:
(b) adequately designed and appropriately located hand-washing facilities;
- Hand-wash stations in the kitchen, front of the house and staff washroom did not have appropriate supplies at the time of inspection. Ensure the hand-wash station supplies are refilled promptly and dispensers are functional.
- 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to
(a) protect food from contamination;
- Spoons stored in a tin can on the Hot-line had debris build up and was stored in a manner that the handler would be touching the food-contact surface of the spoons. Ensure containers used to store utensils are cleaned and sanitized regularly and utensils are stored appropriately.
- 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to

- Facility observed to use parchment paper to line stainless steel shelves. Parchment papers are not designed to be used as liners and obstruct effective cleaning and sanitization of food contact surfaces.

- Cutting board at the front of the house had deep lots of gashes and stains on it. Replace with a new cutting board to comply
- 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
- Mold growth observed inside ice machine. Ensure the ice machine is cleaned and sanitized more frequently.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- In accordance with Section 3.3.5 of the Nova Scotia Food Services and Food Retail Code, you must hold all hot foods at a temperature above 60 degrees Celsius. Rice kept inside rice cooker was at 27C. Rice was discarded at the time of inspection.

- Bags of rice and flour found to be stored on the kitchen floor at the time of inspection. In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must: store all food and food items a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets; store all food and food items a minimum of 5 cm (2 in.) from the walls.

- Open bag of flour was left on the shelf at the time of inspection. Operator transferred it into a plastic container with lid at the time of inspection.
