- Observation: Dishwasher not sanitizing properly due to sevreal spray nozzels observed missing on both the upper and lower final rinse spray arms.
- Wiping cloths observed not being stored in Quat sanitizer when not in use. Several containers with Quat were set up at time of inspection. Concentration measured at 200ppm
- Corrective Action(s): Resanitize all utensils ie plates cutlerly using the bar high temperature dishwasher. Larger items that cannot fit inside the bar dishwasher will need to be sanitized in a sanitizing sink with 100ppm bleach after washed.
- Ensure Quat solution is changed approx every 2 hours. Verify concentration using your Quat test strips

- Observation: Pressure gauge on dishwasher still showing low pressure after solenoid replacement by technician. Final rinse tested at 72c at plate level. Dishwasher may be used for sanitizing.

- Observation: Final rinse temperature observed to be too low at 65c. Incoming water at on demand hot water tank was set too low at 120F. This was raised to 140F at time of inspection. This did not raise the final rinse temperature as the pressure gauge is reading approx 5psi on the final rinse.
- Corrective Action(s): Rewash all utensils as discussed using the 3 compartment sink method

- Corrective Action(s): Replace missing tap.

- Glassware in outdoor bar area stored out in the open.
- Corrective Action(s): Install a paper towel dispenser. An upright dispenser would be acceptable at this sink.
- Glassware storage needs to be kept protected from pests. Recommend installing a cabinet that can keep pests out.
