Pest control contract in place. Multiple traps observed in place in the kitchen. No droppings observed in the dry food storage room.

      • Observation: Large bait boxes in the kitchen are labelled containing rodenticide. Informed by school staff that these traps are one way traps ie once a rodent enters it cannot leave as a door closes behind it.
      • Corrective Action(s): Confirm with the pest contol company that the bait used inside the bait boxes contains no rodenticide as the use of rodenticide is not permitted within a food service establishment. Pest control company has not returned my inquiry made 2 days ago.

      • Observation: Rat droppings were observed in the following areas:
      • 1) To the left of the laundry machine
      • 2) Next to the ice machine
      • 3) Under the oven
      • Rodents can transmit disease and must be eliminated. Pest control company (Terminix) conducts biweekly inspections
      • Date to be corrected by: June 2 2023
      • Corrective Action(s): Clean/sanitize all areas on premises where rodent droppings are found. Ensure daily cleaning of under equipment and hard to reach areas to monitor for new activities and eliminate food debris that may be attracting rodents.

      • Observation: Bait boxes containing rodenticide were observed throughout the kitchen areas include under cookline, under dishwashing station inside dry storage room, under handsink by ice machine, etc. Rodents can transfer the poison on their feet/fur and contaminate food

      • Corrective Action(s): Remove all bait traps from the inside of the kitchen. These boxes can be placed outside. Use live traps instead. Contact pest control company and request that future bait boxes are not placed on the food premises.

      • Corrective Action(s): Clean ceiling tiles and return vents more frequently ie every 3 months.
      • Ensure students have been trained on how to properly clean both the blade and guard of the slicer. Ensure a flashlight is available to check the work.

      • Observation: Observation 1: Quats sanitizer dispensed at 50ppm at janitorial sink (mops sink). Quats spray bottles tested at 50ppm. A concentration of 200ppm quat sanitize food contact surfaces to achieve effective reduction in pathogens.
      • Observation 2: Meat slicer showed debris behind the blades indication a lack of thorough cleaning and sanitizing. Meat slicers have been implicated in outbreaks such as those involving Listeriosis.
      • Corrective Action(s): Correction #1: Operator mixed up 100ppm chlorine bleach solution, dumped out quats and re-filled containers with the chlorine bleach solution. Mix up new chlorine solution daily until quats dispenser fixed. Alternative solution: Manually mix quats solution to 200ppm, use test strips to ensure it is 200ppm. (Corrected during inspection)
      • Correction # 2: Clean and sanitize the meat slicer thoroughly. Including underneath the machine (table top). Use a flashlight to see hidden areas harboring debris. (Date to be corrected by: Immediately

      • Observation: Back door left ajar with a door stopper. Door leads to garbage area. This area is an attractant for pests such as rodents and flies and the open door serves as an entrance to the food facility. Rodents harbour many pathogens that can be transmitted to humans.
      • Corrective Action(s): Close the back door at all times (excluding removing garbage, etc)
