    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Rehydrated tapioca pearls are being held at room temperature. Once rehydrated the pearls become perishable and must be either held hot (60C or above) or held cold (4C or below). An alternative option is to use time as a public health control which would allow the rehydrated pearls to be held at room temperature for a maximum of 2 hours. Whatever remains after 2 hours must be discarded. As well a method of tracking this process must be implemented.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Quat based test strips had expired in Dec of 2024. Please replace with new non-expired test strips to be able to accurately test sanitizer solutions (200ppm).
