      • Observation (CORRECTED DURING INSPECTION): Clear box of white sugar is stored on top of and next to cleaning supplies.
      • Corrective Action(s): Move the box of sugar to another shelf. Keep all food items sufficiently away from chemicals.

      • Observation: Ants found under the soiled linen storage under the 2 compartment sink.
      • Corrective Action(s): Soiled linens stored under the sink are scheduled for pick up every 2 weeks. Increase the pick up to once a week, ensure to remove ALL food debris at the end of each night.
      • Clean with a degreaser and sanitize the floors with bleach to help remove any remaining food residue. Use store bought traps if necessary.

      • Corrective Action(s): Hot water supply to all other fixtures is adequate. Likely an issue with the heat booster inside the dishwasher. Call for service to repair the booster. Dishwasher should not take up to 6 runs to achieve the minimum required temperatures.

      • Observation: Rodent droppings noted in the corner behind the ice machine. These droppings appear to be old.
      • Corrective Action(s): Remove droppings. Clean and sanitize with a strong bleach solution. Continue to monitor this area as it was an area of concern from the last inspection.

      • Observation: Wash and Rinse Temperature dials on the dishwasher do not appear to be accurate.
      • > The wash temperature dial stays at 50C and does not move for the duration of the cycle.
      • > The rinse temperature dial shoots up to 90C at the start of the cycle and hovers around this temperature for the duration of the cycle.
      • > All final rinse temperatures recorded for the month of July so far have ranged between 90C to 95C.
      • Corrective Action(s): Service the dials so that they are accurate. Until serviced, obtain a waterproof thermometer to verify temperatures from within the unit.
      • Maximum held temperature on the thermometer from inside the unit must be at least 71C for sanitizing.
