      • 1. Paper towel was not available in the staff bathroom or at the handwashing sink by the sandwich prep cooler.Please ensure hand washing sinks are stocked with paper towel.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Sanitizing solution (in spray bottles) was measured at 100ppm chlorine - this is satisfactory.Cleaning cloths were observed at room temperature on countertops and food contact surfaces. PHI discussed alternative practices to help prevent rapid growth of bacteria on cloths, including:-Storing cleaning cloths submerged in sanitizing solution-Changing out all cloths every 1-2 hours for new, clean cloths-Switching to single-use towels, such as paper towelsPlease implement one of the options noted above.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The upright cooler next to the prep cooler was known to be having temperature control issues. PHI measured temperature with an infrared thermometer (10C) and with a probe thermometer in food items (10C). Opened food items requiring refrigeration were discarded including two containers of bocconcini, olives, chili spread, jalapeno spread.ACTION: Please either repair/replace the cooler so that it maintains less than 4C, or unplug the cooler so that it can be used for dry storage only.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Domestic pesticide (RAID) observed in back room near dish sink.Eradication of uncontrolled pests should be carried out by a certified pest control operatorutilizing approved chemicals and methods. This is intended to eliminate the risk of contamination food/food equipment with poisonous chemicals. These chemicals are not designed for use in commercial food facilities.ACTION: Please remove the pesticide from the facility and use a licensed pest control operator for future applications.
