    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The rice and bean compartments of the steam table were less than 60C. Internal temperature of both foods were less than 60C. High risk food had been in the unit for less than 1 hour.- Food was reheated above 74C, the extra protective layer was removed from the hot holding unit and unit was measured above 60C.Ensure food in the hot holding unit is maintained at a minimum of 60C, monitor temperature every 2 hours.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The exhaust hood is overdue for cleaning (February 2023). The exhaust hood must be cleaned in accordance to the professional cleaning schedule as shown on the sticker. Replace sticker once cleaned for ease of tracking of the cleaning schedule.Dec 4,2023; Operator indicated professional maintenance is scheduled for 8th of Dec,2023
