    • F2.6 Are the premises designed and equipped to ensure safe food handling?
      • Observation(s): As discussed, please complete a deep cleaning of the Tak-oh mobile food premises, including floors, underneath equipment, floor to wall junctions, inside refrigerators and storage shelving.

    • F1.4 Does the premises have the key services (e.g. water, sewer, power) required to operate safely?
      • Observation(s): Mobile food premises found with a broken water supply system and accordingly, hot and cold running water to sinks to support proper handwashing and warewashing was not being provided. As discussed, please confirm your plan to restore or replace the water supply system within the Tak-oh mobile food premises. In the case of replacing equipment with different models (ie. hot water supply) or locations of equipment (fresh water tank), please provide your plan for review and approval prior to making changes. Functioning water supply system is required prior to resuming operation.
    • F1.7 Are foods protected from contamination?
      • Observation(s): Observed raw meat stored on top of pre-cooked/RTE food inside the one upright refrigerator. Observed bags of pre-cooked food (ie. broth, meat, etc) stored inside the bottom drawers of the upright refrigerator in storage for an unknown/prolonged period (possibly weeks). Please ensure that raw meat is stored below and adequately separated from ready to eat food/ingredients. Please date label potentially hazardous food stored in refrigerators for a prolonged period and turnover PHF ingredients like sauces made inhouse and other advance prepared PHF within 5 days.
    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): Please provide a probe style thermometer onsite for verifying final cook temperatures, hot holding temperatures and temperatures of PHF ingredients stored in the upper section of the one prep table refrigerator. Please monitor and record refrigerator and hot holding temperatures 2X daily.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Upright refrigerator was observed with a soiled rag on the bottom shelf , as well as, visibly dirty shelves/drawers. Freezer was observed with a large build-up of ice. Please defrost the freezer and properly clean and sanitize the interior of refrigeration/freezer equipment. Please also clean some shelving and flooring underneath the grill line to remove the accumulation of organic filth. Please repair/replace the standard faucet on the 3-compartment sink that was observed broken off the faucet mounts/connectors.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): Hand washing sink was not functioning at the time of inspection (no water supply). This sink was also missing the paper towel dispenser mounted on the wall above the sink. Please ensure that handwashing sinks are functioning at all times during operation to supply hot and cold water. Please install the paper towel dispenser missing from the wall above the sink.
    • F3.1 Does the operator have a valid operating permit or approval to operate?
      • Observation(s): Re-opening of the Tac-oh Mobile FSE is contingent upon restoring the supply of hot and cold running water to hand washing and ware-wasing sinks in accordance with the BC Food Premises Regulation and the BC Mobile Food Service Guidelines.
