      • Observation(s): Hotholding condiments measured at 55°C. Hotholding setting was turned up at the time of inspection. A gravy mix was made up and had been placed on crockpot held on "high" setting. Product was measured at 27°C. Operator indicated this was a temporary hold after mixing and that the product was to be heated right away. Product was placed in wok for heating to boil at the time of inspection.

      • Observation(s): Some minced garlic in oil was observed to be in the cooking area at ambient temperature. The risks of botulism intoxication were reviewed. The item was placed back in refrigeration as food service has not yet commenced. It was reviewed that this item must be kept out in small portions (to be used up within two hours) or be held on ice.
