      • Chopped and sliced vegetables were not being adequate refrigerated in the cook line. The containers of vegetables were being stored on ice.Ensure that if items are to be refrigerated using an ice bath, the containers should be full submerged in ice and water. Monitor the temperature using a thermometer.Staff prepared an ice bath.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There was food debris and dirt behind the water heater and underneath the storage shelving.Thoroughly clean these areas.

      • 1) Steaming/basting covers had a buildup of grease. - Please clean or replace. 2) The pizza cutter sanitizer pail was stored on the floor. - Please store higher to prevent contamination.
