      • ***Food safety records were not being kept. Template was completed during the inspection with the required information. A blank was also sent out at this time by e-mail. Ensure records are completed daily.

      • ***Staff were washing knives but not sanitizing them before they were being put away. Discussed proper method for sanitizing equipment that did not go through the dishwasher. Utensils are to be washed, rinsed and then sanitized whing the sanitizer solution before being put away. Education provided.

      • ***There were some bags of food on the floor of the walk in freezer. Discussed that foods were not to be stored on the floor. Moved to the shelf during the inspection.
