Purchase chlorine test strips to measure the sanitizer and ensure it is maintained at 100ppm. The sanitizer should be tested every 2 days.2. Purchase a waterproof probe thermometer with maximum temperature function to ensure the dishwasher is reaching a minimum 71*C at the dish level.
