      • The Quat sanitizer solution near the hand washing sink was measured at 100ppm.A new solution was prepared by the operator which was measured at 200 ppm.-Ensure that the sanitizer solution is changed every 2-4 hours, and the concentration is maintained at 200 ppm.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • No temperature records were maintained for the month of December. No records were found for the month of December inside the book which was used for recording the temperatures.-Ensure that temperature records are maintained and recorded daily.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The lettuce in the insert of the veggie prep cooler was measured at 14 degrees C at the top and was measured at 9 degrees C at the bottom.The top layer of the lettuce was discarded, and the rest of the lettuce was placed inside the prep cooler.-Ensure that the perishable food inside the cooler is measured at 4 degrees C or less.
