      • Observation: Grease accumulation observed in the exhaust canopy. Exhaust canopy to be serviced within a few days
      • Corrective Action(s): Add to your weekly cleaning procedures staff wiping down a portion of the exhaust canopy to eliminate the accumulation of grease in order to prevent grease dripping onto the food preparation grill surface below.

      • Corrective Action(s): Purchase a thermometer fo the vegetable cooler to eusre logs are accuratley recorded.

      • Floor still requires additional cleaning below back room equipment . Move the freezers to access the floor

      • Observation: Exhaust canopy observed with grease build up. This is a REPEAT VIOLATION noted in report on Sept 26, 2023. Manager stated on Sept 26 that the canopy would be cleaned weekly to prevent the build up /accumulation of grease so that the grease does not drip onto the cooking surface/food below.
      • Floor surfaces below back room shelving and flooring below back room upright freezers observed with substantial food spillage/debris build up
      • Corrective Action(s): Clean interior of exhaust canopy. Set up weekly cleaning schedule
      • Clean floor as discussed. Set up weekly cleaning schedule to clean hard to reach areas.

      • Observation: Stoppers missing for 2 of the 3 sinks at the 3 compartment sink. This is a REPEAT VIOLATION as noted in report on Sept 26, 2023.
      • One bowl removed to be discarded to to being badly cracked. This is a REPEAT VIOLATION as noted in report on Sept 26, 2023. On Sept 26 Manager stated new bowls have been purchased
      • Several bowls observed with substantial staining.
      • Corrective Action(s): As stated in my previous report on Sept 26, 2023 "Purchase stoppers as a back up in the event of a failure of the dishwasher so that a 3 compartment manual warewash can be done"
      • Replace all damaged/chipped bowls. As per my report on Sept 26 "Ensure staff are checking utensils daily for potential damage and immediately discarding damaged utensils"
      • Recommend soaking all bowls in a dilute bleach solution ie 200 ppm to remove staining to the interior of the bowls

      • Observation: Stoppers missing for 2 of the 3 sinks at the 3 compartment sink adjacent to the dishwasher
      • Corrective Action(s): Purchase stoppers.

      • Observation: Exhaust canopy observed with substantial grease build up.
      • Corrective Action(s): Manager stated exhaust canopy will be cleaned on Thursday. Once cleaned ensure the inside of the exhaust canopy is wiped down/cleaned on a regular basis ie weekly to prevent the build up/accumulation of grease so that it does not drip onto the cooking surface below.

      • Several bowls observed with chips. These were removed to be discarded
      • Corrective Action(s): Purchase stoppers as discussed as back up in the event of a failure of the dishwasher so that a 3 compartment manual warewash can be done.
      • Manager stated new bowls have been ordered. Ensure staff are checking utensils daily for potential damage and immediately discarding damaged utensils.

      • Observation: Several bowls observed with chips. These were removed to be discarded.
      • Several compressor fins on refrigeration equipment observed with dust build up.
      • Corrective Action(s): Ensure staff are checking utensils daily for any potential damage and immediately discarding damaged utensils.
      • One front refrigeration unit will need to be pulled out in order to access the compressor fins to determine whether they require cleaning.
