- Observation: Exhaust canopy observed with grease build up. This is a REPEAT VIOLATION noted in report on Sept 26, 2023. Manager stated on Sept 26 that the canopy would be cleaned weekly to prevent the build up /accumulation of grease so that the grease does not drip onto the cooking surface/food below.

- Corrective Action(s): As stated in my previous report on Sept 26, 2023 "Purchase stoppers as a back up in the event of a failure of the dishwasher so that a 3 compartment manual warewash can be done"
- Replace all damaged/chipped bowls. As per my report on Sept 26 "Ensure staff are checking utensils daily for potential damage and immediately discarding damaged utensils"
- Recommend soaking all bowls in a dilute bleach solution ie 200 ppm to remove staining to the interior of the bowls
