- Observation: Final rinse cycle in the dishwasher observed to be not disengaging. After 4 minutes cycle was interruped by opening the door. This violation was noted in my report on June 2, 2022.
- Light inside the proofer observed to be not working
- Seal to proofer door observed with some damage
- Corrective Action(s): Contact technican to repair dishwasher. If final rinse cycle is not interuped dishwasher will keep running.
- Ensure staff are aware they will need to interrup the final rinse cycle until repaired.
- Ensure staff are aware not to run the dishwasher until the final rinse gauge reads 204-205F.
- Final rinse tested at 75c (At plate level)
- Repair light and replace damaged seal.

- Corrective Action(s): Contact technician as discussed. Ensure staff are aware not to run the dishwasher until the final rinse water temperture has fully recovered and the gauge shows >200F
