- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- The automated food contact surface sanitizer dispenser is not providing a detectable concentration of sanitizer. In accordance with the Nova Scotia Food Retail and Food Services Code, quaternary ammonium sanitizer must be at a concentration of 200ppm or it must be at the concentration specified by the manufacturer.
