- Bleach solution was mixed with soap. Wiping cloths must be stored in a sanitizing solution only when not in use. When mixed with soap, bleach will be less effective or even not effective.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Ice was being used to refrigerate the chopped veggies and open packaged pickles, etc. Ice was not in direct contact with the food containers. In addition, using ice for refrigeration is only the temporary solution. A proper cooling unit or other insulated containers should be obtained to keep high risk foods refrigerated at all times.

- Only 50ppm chlorine residual was obtained from the sanitizing solution sink. Ensure that a 100ppm bleach solution be obtained when using it to sanitize dishes and utensils. Chlorine test strips should be obtained.
