     • A food vendor who was selling jerkies was encountered. Later our office noticed that jerkies are not prepared in an AHS approved kitchen. More information is required such as the sources of the meats, etc. In addition, proper sampling must be conducted to prove that water activity is low enough to keep jerkies at room temperature. The above was discussed with the market manager after inspection. Further follow-up with this food vendor will be conducted.
