- Observation(s): 1) Food-safe sanitizer monitoring strips must be obtained, and only food-safe sanitizers used for sanitation of food contact surfaces: 100-200 ppm Chlorine solution OR 200-400 ppm Quats solution.
- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): 1) As above, only food safe sanitizers may be used for sanitation of food contact surfaces. If dishwasher of main kitchen is to be used, the plate level temperature of the dishwasher must be checked daily to ensure it reaches 160F/71C.
