Scrub all surfaces of your hands for 20 seconds (palms, backs, fingers, thumbs, nails).4. Rinse under clean, running water.5. Dry with a clean towel or air dry.6. Chicken reheated in the oven during the inspection.2. There was no water in the hot holding unit for the chili, and the temperature measured 54*C. Hot water added during the inspection. COMPLETE THE FOLLOWING:1. Ensure foods are heated to 74*C/165*F, and checked with a thermometer before moving to hot holding.2. Ensure hot water is always available in the hot holding unit so temperatures do not drop into the danger zone.
