- High-risk home prepared food (chicken biryani) was not present during inspection, however, hot holding units with signage were on display.Discussed with operator that this cannot continue as high-risk foods must be prepared in an approved, permitted kitchen. Discussed using other kitchens in town, such as community halls, churches, or restaurants, to prepare the food. Also discussed making renovations to add a stove and ventilation system to prepare food on-site.Will send operator the following:1. Permission to Use an Approved Food Establishment Form2. Low- Risk Home Prepared Foods information sheet

- The spray bottle labeled as sanitizer measured 0ppm chlorine and 0ppm quats when tested. The solution was remade and measured at 100-200ppm chlorine.ACTION:Ensure that 100ppm chlorine bleach or 200ppm quats sanitizing solutions is available at all times.ALL STAFF are responsible for ensuring there is adequate sanitizing solutions.The solutions should be used whenever food handling and cleaning is occurring. The solution will not serve its purpose to be stored under the hand sink.
