      • The following observations were made at the bakery:1. Several soiled cleaning cloths were observed on food contact surfaces.**Ensure soiled cleaning cloths are stored in sanitizer at all times. 2. There was no sanitizer available for use at the prep stations during active food preparation.**Ensure sanitizers at adequate concentrations are available for use at all times during food preparation.

      • The sanitizer dispenser at the Dim Sum kitchen was not dispensing sanitizer at adequate concentrations. Measured at 100ppm of Quats.**Ensure quat sanitizers are maintained at 200ppm and have the concentrations routinely monitored.-The operator repaired the dispenser and was confirmed to be dispensing quats sanitizer at 200ppm during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A bowl of cut mixed fruit filling was left out at room temperature in the bakery. Temperature measured at 17 degrees C.**Ensure all high-risk foods are stored at safe temperatures of 4 degrees C and below or 60 degrees C and above.**When doing batch cooking/food preparation ensure to work with smaller quantities to ensure food items are not stored in the temperature danger zone for extensive periods.-The food items were discarded.

      • The following areas/items require cleaning:1. The floor below/ behind the standing ovens in the main kitchen.2. The floors below the fish tanks and display coolers in the seafood department.3. The floor of the walk-in dairy cooler.4. The floor of the walk-in seafood cooler.
