- Some mouse droppings were noted:a) In the northwest corner of the dry food storage room by the manager's office.b) In the northeast corner of the basement storage room around the blue bin storing peanuts.c) In the northeast corner wall of the basement by the chest freezers under the linen storage table.- Mouse droppings to be safely cleaned and areas monitored for pest activity. Traps were noted.

- The bottles of quat sanitizer being used in the kitchen and bar measured 0ppm.- Corrected during inspection. A new 200ppm quat solution was made for each bottle.

- Knives were being stored in a knife block with plastic bristles that are hard to clean and had food debris noted in the bristles.- Ensure knives are stored in a sanitary manner where the means of storing the knives is easily cleanable.

- Food and debris buildup was noted in the main kitchen:1) On the bread shelf under the perforated shelf mat.2) On the bottom rail of the slide cooler beside the walk-in cooler/dish area.3) Behind and under the mechanical dishwasher in the main kitchen. - Ensure these areas are cleaned.
