    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Stand up double door fridge is missing a display thermometer for monitoring temperatures with a digital display not available on the unit. Ensure that a display thermometer is obtained for the fridge so that it's functionality can be monitored regularly.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher's wash step is not functioning properly as the wash cycle and pressure gauges did not reach the optimal temperature and pressure ranges after two test cycles. The Rinse cycle gauge did exceed the minimum temperature of 180F/82C. Ensure that the unit is serviced prior to the next booking so that it is achieving the minimum wash cycle temperatures necessary for the complete removal of food materials from dishes and utensils prior to the rinse/sanitizing cycle.
