      • A sanitizing solution was not available for use while food preparation had begun for the day. The part owner prepared the solution when requested (capful of bleach per insert container filled with water)
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The interior temperature of the pizza line cooler was first measured to be at a temperature of 8.4C using an infrared thermometer while the top cover was propped open. The cover was closed and a short while later the interior temperature was measured to be within range of 4C. The part owner was advised to ensure that the cover is kept closed when not in use so that cold air stays inside the unit.
