      • 1. Walk-in cooler: - Stainless steel bowls stored on top of raw seasoned ground beef. - Raw meat in sealed packaging stored above bottled drinks and box of potatoes. COMPLETE THE FOLLOWING:1. Do not store bowls directly on food, as the bottom of the bowl can contaminate food, food preparation surfaces and hands. Use a utensil with a scoop to minimize potential risk for cross contamination.2. Store raw meat below other foods to protect them from contamination in the event of an accidental spill. Designate shelves for the storage of raw meat only.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1. There was a hole in one of the mesh screens at the garage door.2. Pest control records were not being retained on site. COMPLETE THE FOLLOWING:1. Repair the screen to prevent the entry of insects.2. Please keep weekly pest control records on site for 1 month.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Walk-in cooler:The lightbulb was not secured in place and did not have a cover.COMPLETE THE FOLLOWING:1. Secure lightbulb and replace cover.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Bags were observed hanging over the dishwashing sinks. Operator stated these were filled with yogurt and they did this for approximately 8 hours as a drying process and the final product is then used. Please provide the full ingredients and procedure for this product for review. This includes any checks for temperature, water activity, pH, etc.
