- 1. Observed raw chicken being cut on a table in the large walk-in cooler in the back area. There was no accessible handwash station in this area. Informed the Operator that handwash stations must be easily accessible and cannot be blocked by a door. The Operator agreed to not do any cutting in this cooler.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- No sanitizer solution was initially prepared for food handling areas in the facility. Wet cleaning cloths were placed on top of the display cooler counters at the time of inspection. Chlorine sanitizer was prepared, and concentration was tested at 100 ppm.- As discussed, ensure that sanitizer solution is prepared for use at all times for each food handling area.- Provide a container with sanitizer solution for storing cleaning cloths during use.

- Meat filled cardboard boxes stacked on top of each other were stored on the floor in the freezer. Operator is to ensure to relocate boxes.- Please ensure all food products are stored in a safe and sanitary manner at least 15 cm (6 in.) off the ground.
