    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The iodine sanitizing solution bottle was empty. Ensure that chemicals hooked up with the glasswasher be checked on a daily basis. After a new bottle of iodine was changed, there was still no iodine residual was obtained. Repairs should be carried out. In the meantime, all the reusable glasses should be washed and sanitized in the dishwasher in the main kitchen.

      • The foods being stored on the top of the stainless steel cooling unit were still kept around 9C during inspection and both the chef and the GM advised that repairs had been carried out to this cooling unit. They also advised that the owner has been looking for a bigger compressor for this cooling unit.
