- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The whole cut roasted pork intended for hot holding display was kept at 50C during inspection. The staff was required to send the meats back to the main kitchen to be heated up until the internal temperature reaches 74C. Ensure that high risk foods intended for hot holding display be kept at 60C or above at all times. Recommend that only one small piece of pork be taken our of the warmer at one time. Also discussed with the on site manager that the whole cut meats must be cooked until the internal temperatures reach at least 74C and internal temperatures must be checked at different part of the whole cut meats.

- The lower level of the walls in the storage room close to the dishwasher area were left open. Some mouse droppings were observed in the wall. Open walls must be properly sealed off. Some mouse traps should be set up in the storage room and mouse droppings must be properly cleaned up.

- The temperature of the cooler was kept at 7C during inspection. This cooler should be closely monitored. No high risk foods should be stored in it until it can be maintained at 4C or below.
