- - Fillings for golgappe (potatoes, onions, and spices) were being mixed together in a large metal container placed on the ground. The container was subsequently moved onto a wooden pallet.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Three large containers were initially kept at room temperature measured; these were later moved to refrigeration. The operator was instructed to bring out smaller quantities as needed.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- - A two-compartment sink was not available at the start of the inspection. A temporary two-compartment sink setup was arranged by a volunteer during the inspection.
