- Observation(s): • Sandwich open air cooler showing variation between built in LED display unit thermometer and portable thermometers in the unit (6°C - 14°C respectively) . Probe of dessert item showing ~14°C • Have the unit serviced to confirm the operating temperature of food items on display. If 4°C of the food on the shelves can not be maintained despite the reading of the internal thermometer, the unit may not be used to store perishable food items.

- Observation(s): • Make adjustments to settings to keep food in open air display cooler at 4°C. It appears to be experiencing fluctuations in air temperature. Add a thermometer to the display shelf to compare with the units' built in digital thermometer. • Make fine adjustments in hot holding unit settings as per F1.2A. Recommend using the probe thermometer to insert into food items to better gauge the correct setting.
