      • The employee cooking the chicken was asked what internal temperature he was looking for to indicate the chicken was cooked and safe to eat and did not know the correct answer. PHI provided education. Please ensure all employees handling food are well versed with safe food handling.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • A scoop was found stored in breadcrumbs with the lid open. Please ensure scoop is not stored in food and the container is stored with the lid secured.
