    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • There were open cans of olives stored in the cooler. Refrain from storing food in open cans for more than a day as the can is not easy to clean and is prone to rust formation. Any leftovers of food from a can should be placed in an adequate food container that can be thoroughly cleaned and sanitized. The operator placed the remainder of the olives in a food container at the time of the inspection.
    • 15. Is the facility free of a pest infestation?
      • Three mice were found in the following areas: - In the tin cat trap near the oven- In the tin cat trap near the furnace - In the tin cat trap beside the pop cooler in the frontThe facility must be free of a pest infestation. Hire and consult with a professional pest control operator to conduct an assessment of the facility to abate the issue. Provide the pest control records to the undersigned Public Health Inspector until further notice. Ensure food is stored at least six inches above the floor and tightly covered to prevent attraction of pests.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1. The back door was propped open without a screen door. When leaving the door open, the entrance must have a screen door to prevent the entry of pests. Refrain from propping the door open or install a screen door.2. There was a gap on the bottom of the back exit door.All entry points must be tightly sealed to prevent the entry of pests. Repair/replace the weatherstripping and ensure there is no gap.3. No pest control records were available at the time of the inspection. Pest control records must be readily available upon the request of a Public Health Inspector. Provide the pest control records to the undersigned Public Health Inspector until further notice.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. The wall near the oven and in the back area was in disrepair. The surface is no longer smooth, durable, and easy to clean. Repaint the wall and ensure the surface is smooth, durable, and easy to clean. 2. There was insufficient lighting levels in the front and back of the facility. The light fixtures were burnt out. Lighting levels must be sufficient enough for safe handling of food, to conduct thorough cleaning and to monitor for pests. Replace the light fixtures.3. Several baseboards throughout the facility were peeling away from the wall. Repair the baseboards.4. The wooden bin used to store the pizza trays is in disrepair and soiled with grime and food debris. The material is no longer smooth, durable and easy to clean. Replace or repaint the wooden bin and ensure the surface is smooth, durable and easy to clean.

      • 1. There was food debris on the walls underneath the preparation table. 2. There was food debris and grime on the shelves where the butter was stored. 3. There was food debris and grime along the baseboards throughout the facility. 4. There was food debris and grime throughout the plumbing components underneath the sinks in the back area.The facility must be maintained in a clean and sanitary manner to prevent the attraction of pests. Thoroughly clean the indicated areas and ensure these areas are regularly cleaned.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Drain plugs for the 3-compartment sink are not appropriate for the sink. - Obtain new drain plugs that fit the sink drain perfectly.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1) The weatherstripping for the back door was in disrepair. Gaps were visible.Install a new weatherstripping for the back door.2) A few droppings found near the hot water thank and the furnace. - Clean and sanitize the area.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Large moldy cutting board stored behind the 3-compartment sink. - Discard. 2) Dust and flour accumulation observed on various surfaces in the back and front of the facility. - Clean and maintain in a clean and sanitary condition.
