- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The prep table cooler across the grill was found to be at temperatures ranging from 11-13C atthe beginning of the inspection. The insulated lid was fully open at the time of the inspection as customers are already arriving prior to lunch service. The experienced staff member at that station advised that the cooler recently started leaking and the owner advised that a replacement is currently on the way fromCalgary with arrival later in the day.Meat products such as patties are not being stored in this cooler, only ready to eat vegetables such as lettuce and non-perishable condiments such as pickles. Advised owner that service may continue with Time as a Public Health Control measures in place given thelong history of compliance at this facility - Perishable ingredients such as processed vegetables are to be discarded at the end of the lunch rush period unless the cooler falls within reasonable range of 4C after the insulated lid has been closed for some time. Also discussed the use of the lower cooler with multiple compartments across from the drive thru window as a backup option for the time being.
