      • Observation: 1. Rodent feces observed in various corners of the facility and between storage racks.
      • Some observed in the staff washroom.
      • 2. Flour beetle observed in large pallet full of flour and in covered bin of flour in make line.
      • Beetles are in various stages of development (larvae, adult, dead).
      • Operator has isolated some heavily contaminated flour on pallets, labeled to be discarded.
      • 3. Flies observed to be in various corners and on cutting board. Both black flies and small fruit flies.
      • Corrective Action(s): 1. Clean up rodent feces.
      • Remove any standing water, water behind coolers (condensation), close toilet at end of night, sanitize all areas.
      • Sanitize brooms and mops to prevent transfer of odors from one section to another.
      • 2. Flour beetle infestation needs to be controlled.
      • If suspecting the supplier, find alternate supplier or resolve issue with current one.
      • Isolate contaminated flour and discard product.
      • Recommend doing a complete clean of facility by removing all food sources for at least the duration of the life span of the beetle (3-5 days).
      • Clean and sanitize all bins that beetles appear.
      • 3. Clean and sanitize cutting board.
      • Facility already has flight lights. Discuss with pest control whether these need to be placed more strategically or if alternate solutions can be used.

      • - Clean and sanitize outer packaging material (shrink wrap) of flour bags with sanitizer (bleach) solution. Go through product and discard any bags that have been chewed through (none observed at time of inspection).
      • - Clean and sanitize the stored shelves of bread proofing cabinets with sanitizer (bleach) solution.
      • - Sanitize floors with bleach solution.
      • - Contact a professional pest control company for servicing. Set up a contract for bi-weekly pest control services. Retain a copy of the contract for health inspector to review, and keep all copies of pest control invoices/reports onsite.
