      • Observation (CORRECTED DURING INSPECTION): 1 container of BUSH coloring found at the dry storage shelve. Operator confirmed that no food in the kitchen was made with this coloring. BUSH coloring contains ingredient that is unfit for human consumption. Operator immediately voluntarily discarded the BUSH coloring. Only purchase the food coloring form approved source.

      • Observation (CORRECTED DURING INSPECTION): 3 trays of marinated meat noted to be stored in the walk-in cooler directly on the ground, and uncovered. Staff immediately covered the meat with saran wrap, and moved the meat to the shelves. Food in cooler must be covered and stored at least 6 inches off the floor to prevent food from contamination.

      • Observation (CORRECTED DURING INSPECTION): 2 basketball noted to be stored in the 2 compartment sink. Staff immediately removed the basketball away from the kitchen. Do not store any items that are not required for restaurant operation in the premises.

      • Observation (CORRECTED DURING INSPECTION): 2 containers of BUSH brand coloring noted to be stored at the dry storage shelve near the 3 compartment sink. Operator stated that no food in the kitchen is made with the coloring. Operator voluntarily to remove the BUSH coloring away from the shelve, and will return to the supplier. BUSH brand coloring contains ingredient that is unfit for human consumption. Only purchase the food coloring from approved source.

      • Observation (CORRECTED DURING INSPECTION): Ice scoop noted to be stored directly inside the ice machine. Operator immediately took the scoop and stored in a clean container outside of the ice machine. Do not store the scoop in the ice machine directly as it may contaminates the ice.

      • Observation: Flies are observed in the dishwashing area.
      • Corrective Action(s): Contact pest control company to assess flies and provide treatment (if necessary) to eliminate flies and prevent contamination to food. The pest report must be emailed to the inspector once the assessment is completed.

      • Observation (CORRECTED DURING INSPECTION): Handwashing station in kitchen (directly upon entry) and in staff washroom not supplied with paper towel or other single-use drying method. Operator placed paper towel in both dispensers during time of inspection.
      • Corrective Action(s): Ensure all handwashing stations are adequately supplied with paper towel, soap, hot and cold running water at all times to promote foodhandlers to practice proper handwashing and to prevent potential contamination to food.

      • Observation (CORRECTED DURING INSPECTION):
      • 1. Multiple food items in walk-in cooler observed un-covered and stored directly on the floor. Operator covered all food items during time of inspection and placed foods on shelving units.
      • 2. Uncovered containers of raw meat stored directly on the floor inside the walk-in cooler
      • 3. Boxes of raw meat stored above boxes of produce in the walk-in cooler. Operator moved the boxes away from produce during time of inspection.
      • Corrective Action(s): Ensure all foods are stored covered with food grade material and stored at least 6 inches off the floor to prevent possible contamination. Also, ensure raw foods are always stored away from ready-to-eat items (such as produce) to prevent cross-contamination.

      • Observation: Some fruit flies observed in the kitchen near the 3-compartment sink. Operator mentioned that they had observed the flies in the past and have one sticky trap in place in the staff washroom near the soft drink disposal can..
      • Corrective Action(s): Contact pest management company to place traps around the premises or install more sticky traps around the kitchen (near the 3-compartment sink). Refrain from using chemical sprays in the kitchen to prevent chemical hazards. To prevent attraction/harbourage/breeding of fruit flies, ensure soft drink cans are disposed of daily.

      • Observation (CORRECTED DURING INSPECTION): Frozen meat and ground meat being defrosted at room temperature. Temperatures were ranging in between 0'C-6'C. All moved to prep sink under cold running water at this time. To be used within the next 30 minutes for cooking.
      • Corrective Action(s): Ensure to thaw food by placing under cold running water or in walk-in cooler (at least a day ahead), but never by leaving them at room temperature as discussed at this time.

      • Observation (CORRECTED DURING INSPECTION): Foods in hot-holding units were placed directly in the unit without proper reheating step. Operator was advised to have all foods reheated on stove first before storing them hot in the warmer at this time.
      • Corrective Action(s): Ensure all cooked foods are properly reheated on stove until the temperature reaches 74'C and then placed in the hot-holding unit at 60'C. DO NOT reheat foods in the hot-holding unit, as these units are not designed for rapid reheating of food. Keeping cooked foods in the danger zone (4'C-60'C) will only promote pathogen growth in food.

      • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Cooked carrots (8.9'C) placed at room temperature. Placed in the walk-in cooler at this time.
      • Corrective Action(s): Ensure to have cooked carrots stored in cooler at 4'C or below. If to keep small amount at room temperature during dinner rush (only), discard after 2 hours.

      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher measured at 0ppm for chlorine sanitizer at time of inspection. Restaurant just opened for the day.
      • Corrective Action: Dishwasher maintenance person was called and manual sanitizing in 3-compartment sink was set-up at time of inspector.
      • Repair was done at time of inspection. Chlorine sanitizing measured 100ppm at plate level after the final rinse.

      • Observation (CORRECTED DURING INSPECTION): (1) Raw meat stored next to and above ready-to-eat items in plastic bins
      • Corrective Actons: Raw meat was moved and dridge was reorganized at time of inspection. Raw meat must be stored below ready to eat items to protect against contamination.
      • (2) Many food items were uncovered in the walk-in cooler and freezer at time of inspection.
      • Corrective Action: Food items were covered and walk-in was reorganized at time of inspection.
      • All food items must be covered and stored in food grade containers to prevent contamination.
