      • Corrective Action(s): All foods for hot holding must be reheated or cooked to 74 C and then placed in the hot holding unit that has been pre-heated.
      • Hot held foods must be maintained at 60 C or above.
      • Staff were instructed to reheat the chickpea curry until it reaches 74 C.

      • Observation: Designated hand sink not functioning (water leaking and structure is loose) and was turned off. Staff using the vegetable washing sink for handwashing.
      • Corrective Action(s): Repair hand sink so it is in good condition and equipped with hot and cold running water, liquid soap and single-use towels. Correct immediately.

      • Observation (CORRECTED DURING INSPECTION): Observation
      • Curry sauce in 2 liters insert on ice on food prep counter in kitchen measured 13C with probe thermometer. Curry sauce has been on ice for more than 4 hours prior to inspection.
      • Corrective Action:
      • Cold potentially hazardous foods must to be kept at 4C or less to prevent the growth of pathogens and production of toxins that can potentially cause illness. Staff voluntarily discarded the food item.

      • Observation (CORRECTED DURING INSPECTION): Observation:
      • Surface sanitizer in pail at the front area had QUATs at 50ppm. Staff reported sanitizer was prepared more than 4 hours prior to inspection.
      • Corrective Action:
      • QUATs sanitizer needs to be at 200ppm to effectively sanitize surfaces to prevent potential contamination of foods by pathogens. Staff replaced sanitizing solution in pail with new QUATs solution at 200ppm. Staff provided with education on the need to frequently monitor sanitizing solution.
