Samosa production occurring at the time of the inspection. All samosas were made and placed in the cooler less than 1 hour prior to the inspection. OK. All moved to the walk-in cooler at this time.
- 2) Chopped onions (11'C), picked carrots - oil, spices, carrots (10'C) and chutney (9'C) placed at room temperature in the servery area. All moved to the prep cooler at this time.

All storage areas need to reorganized so that all foods are stored separately from equipment. Cooked foods should be stored separately from the dry storage area.

- Corrective Action(s): 1. All food items must be stored in food grade containers and protected from contamination.
- 2. Reoganize kitchen storage areas including walkin cooler and freezers so that all foods are protected from contamination.
