      • Observation (CORRECTED DURING INSPECTION): No sanitizer in use at the kitchen. Staff on-site immediately made 200 ppm of chlorine sanitizer solution at the time of inspection. Always ensure to have a bottle/bucket of sanitizer available at all time during food preparation.

      • Observation: Food debris noted underneath shelving in dry storage room.
      • Corrective Action(s): Operator to ensure shelving units in dry storage area are smooth, non-porous, and easily washable for sanitary maintenance. Foods are to be stored at least 15 cm off the floors to facilitate cleaning and to prevent pest attraction.

      • Observation (CORRECTED DURING INSPECTION): Spray bottle with bleach solution was measured to be too strong. The chlorine test strip was bleached once tested. Member diluted the solution and the chlorine achieved a safe and required concentration.
      • Corrective Action(s): Ensure the solution is tested every time it is mixed. Use 1/4 teaspoon with water in a 1L container to achieve 100ppm.

      • Observation: Rodent droppings observed on perimeter of dry storage room. Build-up indicates lack of frequent cleaning.
      • Corrective Action(s): Clean and sanitize the mentioned area to remove rodent droppings. Do not sweep/vacuum to remove droppings. Sanitize area with 1000ppm bleach (1:50 ratio, bleach:water). This can be made with 4 teaspoons of bleach to 1L of water.
      • Ensure the area is cleaned up frequently and call your pest control company to evaluate situation.
