- Observation (CORRECTED DURING INSPECTION): High temperature dishwasher measure 68C max at final rinse after multiple runs.
- Corrective Action(s): Instructed staff to switch to single use dishware and utensils for service until dishwasher has been serviced.
- Instructed staff to sanitize all kitchen equipment and dishware after it goes through the dishwasher in a separate sink with QUAT sanitizer and then air dry.
- Once dishwasher has been serviced and verified that it can sanitize dishes by acheiving 71C at rinse cycle, normal operations can resume.

- Corrective Action(s): High temperature dishwasher must be able to acheive 71C at plate level during the rinse cycle.

- Corrective Action(s): Please clean up rodent droppings and remove snap traps as there is peanut butter, which can attract ants. Report any new droppings to pest control company when spotted.

Recommend reducing time period in which the solution gets replaced if they are reaching 0 ppm at the end of 1.5 hour mark. Operator replaced solution to 200 ppm QUATs at the time of inspection.
