- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- -The black residential refrigerator was measured at a temperature of 8 degrees C. There was an open bottle of creamy salad dressing. Refrigerators containing high risk foods must be maintained at a temperature of 4 degrees C or below to prevent rapid germ growth. Discard the salad dressing. Adjust the temperature of the refrigerator so that it is at 4 degrees C or less and conduct temperature checks regularly to ensure it stays in this range.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- -There were mouse droppings observed inside drawers for the oven mittens and under the oven. Most of the drawers and cabinets were locked so they were not checked. Check all the drawers, cabinets and other necessary areas. Clean up all droppings while wearing appropriate personal protective equipment and disinfect affected areas. Oven mittens were discarded. Ensure all foods are kept in tight fitting containers and ensure that a pest control operator is monitoring and implementing control measures in this room as well.
