    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Wet cleaning cloth stored on the counter contained no sanitizer solution. Cleaning cloths should be stored in a sanitizer bucket of either 100-200ppm of chlorine (bleach) or 200ppm of quats to remove contamination and to prevent the spread of bacteria when cleaning. Ensure a sanitizer bucket is made daily and used to store cleaning cloths when not in use. The operator made a sanitizer bucket that measured 200ppm of quats and placed the cleaning cloth inside at the time of the inspection.
    • 09. Are chemicals stored and handled in a safe manner?
      • Two spray bottles filled with quats solution did not have a label. All chemicals must be adequately labeled to ensure safe usage around food preparation areas. The operator labeled the spray bottle at the time of the inspection.

      • The concentration of food contact surface sanitizer available in spray bottles in the facility was undetectable.Solution was remade and then the concentration measured 200 ppm. Make fresh food contact surface sanitizer solution as often as necessary to maintain solution at 200 ppm.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Quat based food contact surface sanitizer was in use in the facility. Quat test strips were not available to verify concentration of sanitizer.Obtain quat test strips. Ensure that test strips are used to verify the concentration of sanitizer for food contact surfaces.
