    • 23. Is the facility maintained in a clean and sanitary condition?
      • There was a buildup of food debris inside and on the outside of the deep fryer beside the grill.- Inside and outside of the fryer to be cleaned.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • Open cans of grease were being stored outside behind the retail store in the shed with the smoker.- Grease to be stored in an enclosed container.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • There was no air drying space available at the 2-compartment dishwashing sink. - Ensure that there is a means to air dry equipment in the dishwashing area.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Dirty dishes were being stored in the dedicated handwashing sink in the trailer.- Staff placed the dishes in the dishwashing sink during the inspection. Ensure that the handwashing sink is unobstructed and always available for use.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The screen at the south door was not tight fitting and had gaps.- Ensure all screens are tight fitting to mitigate pest entry.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) Some food debris was noted on the bottom shelf of the white freezer across from the grill.2) Some food debris was noted on the inside and outside of the stainless steel coolers across from the handwashing sink.- Ensure these areas are cleaned and sanitized.
