      • Bleach sanitizer bucket in the kitchen was tested at 0 ppm. Ensure sanitizer used for surfaces is at adequate concentration to effectively eliminate harmful microorganisms**A bleach solution bucket was prepared and tested satisfactory during the inspection.

      • 1. Food containers were observed stored directly on the walk-in cooler floor. Ensure that food containers are stored 6inch off the floor easy cleaning and prevent potential contamination.**Food items were removed from the floor and stored on shelves 6 inch above the floor during the inspection.2. A bowl with no handles was observed being used as scoops inside a food container. Using a container with no handles as a scoop increases hand contact with food/ingredients and allows the bowl’s exterior to contact the product. Please obtain scoops with handles, and stored with handle vertical located when inside product.**The bowl scoop was removed during the inspection

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The supports under the counter holding the oven were made of raw wood, which would be difficult to properly clean if made dirty during kitchen operations. Seal, cover, paint, or otherwise render exposed wood surfaces smooth and easily cleanable. *Current plan is to replace these surfaces with PVC material. Please notify once complete.

      • 1) The supports under the counter holding the oven were made of raw wood, which would be difficult to properly clean if made dirty during kitchen operations. 2) The edge of the counter beside the dishwasher was damaged, exposing raw wood surfaces.Seal, cover, paint, or otherwise render exposed wood surfaces smooth and easily cleanable.

      • The basement walk-in cooler did not have a working light source. Install a source of light sufficient to allow the safe and sanitary storage of food.
