- 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
- Temperature logs for ready to eat products were not filled out or were only partially filled out. - Ensure that cooking and temperature monitoring charts are complete and information is retained.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- Personal items such as purses and jackets were being stored on food equipment such as the slicer and on food storage bags under the packaging counter.- Ensure that staff have a dedicated area to store personal items to mitigate crosscontamination.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- The handwashing sink was not accessible at the time of inspection. Storage containers were being stacked on the sink.- Staff removed the bins during inspection. Ensure that the handwashing sink is always unobstructed and available for use.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- The air piping in the smoker room did not contain a screen to mitigate pest entry into the space.- Screen to be installed.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1) There was some food debris accumulation noted at the bottom of the standing cooler beside the handwashing sink.- To be cleaned and sanitized.2) Clean knives were being air dried on a soiled/stained abosrbent egg carton.- The egg carton was removed and knives were washed during the inspection. Corrected.
