      • Fridge/freezer temperature logs are not being maintained. Please start temperature logs. Recommend also writing down dishwasher checks (chlorine level).

      • Linoleum flooring on the outside of the walk-in-cooler on the right side of the door is torn/damaged. Please repair/replace.

      • Wooden shelves above line cooler are wearing, exposing raw wood. - Reseal or repaint these shelves, ensure they are smooth and cleanable.

      • Overall cleanliness is very good, just the walk-in-cooler shelves need a bit of cleaning and the floor in a couple of areas along the walls.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was a wet wiping cloth on the cutting board. Cloth was moved to sanitizer bucket during the inspection. - Please ensure all wiping cloths are stored in an approved sanitizer solution or used once then washed.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Line cooler was warm, ambient air temperature was around 10C. High-risk products were removed from this cooler. - Repair the cooler, ensure it can hold temperatures below 4C before it is used to store high-risk products.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quat sanitizer in red bucket was only at 100ppm; to be between 200-400ppm. Need to change more often. New sanitizer added so now at 200-400ppm.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Several of the foodhandlers had bracelets and/or rings. Jewelry to be removed, particularly when making sandwiches, etc.After handwashing, taps were turned off with hands. To be turned off with paper towel to prevent re-contaminating hands.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Brush for pastry case stored next to clean plates.Store the brush away from food and/or clean utensils.Crates of milk stored directly on floor in the walk-in-cooler. Obtain additional shelving (with bottom rack at least 6" off the floor) or keep an empty crate under them.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Some processed meat/ham was being over-stacked in prep cooler insert in top of prep cooler; was at 11C. Do not stack high risk foods above the line in the inserts.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Personal foods were being stored in the walk-in-cooler. Please ensure personal foods are labelled as being personal foods.

      • Linoleum flooring on the outside of the walk-in-cooler on the right side of the door is torn/damaged. Please repair/replace.

      • Air duct grate above barista bar had a significant amount of dust build up. To be cleaned.Underside and edges of shelving above panini press had a build up of grease. This area needs to be cleaned.
