    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Staff observed not turning off the taps with paper towel after washing their hands.- Please ensure taps are turned off with the paper towel.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Paint wearing off the cinderblock walls in kitchen by the hot holding units.- Walls to be repainted.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The facility is very clean and in good repair. Some additional cleaning required on shelves above the main prep cooler. - Please clean this area.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A few fruit flies were still observed around the prep sink in the kitchen. Please continue with control measure; fly strips may help (but not to be in area near food or clean utensils).
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Ceiling tiles in the kitchen are acoustic tiles. When get damaged/dirty, please replace with ceiling tiles that are smooth, easily cleanable and impervious to moisture. There were some that were damaged and one was missing above the handsink.There is some flaking paint around the skylight. Please repair and repaint.Paint wearing off the cinderblock walls in kitchen. Walls to be repainted.The exhaust hood has no fire suppression and there are gaps between the filters (which are not typical exhaust hood filters, look like furnace filters). Please check with fire department as to whether you should be using a deep fryer (even if domestic) with this exhaust hood).The cutting board/plastic used as shelving by the handsink is damaged. Please replace.Floor is coming up under the prep sink along the wall. To be repaired.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The following areas were observed to require more frequent cleaning:- rafter in ceiling dusty (below the skylight)-where the cutting board/plastic is attached to the shelf (beside the handsink). There is a bit of debris accumulating here.

    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • One of the foodhandlers was wearing several rings and bracelets. Jewelry is to be removed so hands can be properly washed and to prevent potential contamination of foods.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • No cooling logs are being maintained when cooling items such as beans and soup.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Beans that had been cooked over 6 hours ago were found to be at 41C (internal temperature). Foods are to be cooled from 60-20C within 2 hours, then from 20-4C within 4 hours. Will need to change procedure e.g. divide beans into smaller portions to cool more quickly.Beans were discarded during inspection.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A significant number of fruit flies were observed around the prep sink in the kitchen.Regular cleaning of noted areas and increased fly control measures will reduce the presence of flies.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Ceiling tiles in the kitchen are acoustic tiles. When get damaged/dirty, please replace with ceiling tiles that are smooth, easily cleanable and impervious to moisture.       • The following areas were observed to require more frequent cleaning:- Exhaust hood filter by deepfryer- Storage rack above food prep area (dusty)-rafter in ceiling dusty- Ice machine interior (white plastic piece)- Floor along walls and around bar cooler doors-Where the cutting board/plastic is attached to the shelf beside the handsink
