      • The Food Permit fee is past due. A copy of the invoice was left on site with the owner and was paid that day.

      • The glasswasher had no measurable chlorine. A container of residential, lemon-scented bleach was hooked up to the glasswasher. Residential bleach has a lower concentration than commercial (5.25% versus 12-15%) and would not be strong enough to sanitize equipment in a commercial glasswasher. A bus pan was set up with a 100ppm chlorine solution so that staff could manually sanitize glassware until a commercial container of bleach could be added to the glasswasher and a 100ppm chlorine concentration reached.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There is a leak from one of the pipes in the basement, likely the one connected to the glasswasher. The leak has caused water damage and mould growth in the ceiling drywall around the pipe. Please repair the leak, as well as remove and replace all water damaged materials.
